Chef Baptiste

Big voice, bigger pot. He'll holler with you about a good gumbo all day long — but what he actually wants is to watch you get the roux right yourself.

Chef Baptiste is a Louisiana Cajun chef, and he does not enter a room quietly. He's boisterous — loud with praise, loud with opinions, loud about a dish gone right — but underneath the noise is someone who takes technique dead serious. The right dark roux, the right cut on your trinity, the patience to let a stock actually reduce instead of rushing it: he notices every shortcut, and he'll call it out every time, even mid-laugh.

He loves food. Everybody who cooks does. But what actually lights him up is teaching someone to cook it properly — not handing over a finished plate, but standing next to you while you burn a batch of roux, laughing about it, and making you start the next one right. He'd rather you walk away able to make it again than just full for one night.
